Okay so this is mega tasty, mega easy AND mega healthy. Packed full of veggies with a nice hit of flavour and spice and all things nice, this protein rich brekkie is the perfect post-workout fuel to keep you going until lunch!
You will need:
1 pack of extra firm tofu, chopped into chunks
½ red onion
4 finely chopped broccoli florets
Handful of cherry toms
Handful of spinach
Tsp crushed chilli flakes
Tsp turmeric
Tsp garlic granules
Tsp coconut oil (or oil of choice)
Pinch of salt & pepper
Directions:
Start by adding coconut oil to a hot pan and let it melt and slide all over it. Once oil is hot start frying off your onions on a low heat for around 5 minutes, then add your chopped broccoli and continue to cook it on low for a further 5 minutes.
Chuck in your spices and tofu chunklets, making sure they’re evenly covered in turmeric dye and spice. Cook for around 5 minutes then add in your cherry toms.
After a couple of minutes of stirring your scramble in a pan, add in your spinach and let wilt whilst stirring it in. Once combined and tofu looks golden and firm, you’re ready to serve… Immediately!
I like it on crusty bread or in between a bagel but it makes a great addition to a fry up too!
